Frosty Key Lime Pie

I think I really have a problem.  It’s a citrus problem.  Lemon and lime to be exact.  It seems like almost everything I make lately has lemon or lime juice in it!  Literally every cocktail, appetizer, salad, dessert, pasta, fish, chicken or beef dish I have made in the last few weeks contains lemon or lime juice! It’s probably just a summertime thing, or maybe I have some kind of deficiency no one has ever heard of! I could check Web MD but, it’s not necessary.  I’m pretty sure I have  “I should be sitting on a beach on a tropical island syndrome” and, sadly, insurance doesn’t cover that!  Anyway, the desert I’m making today is Frosty Key Lime Pie.  It is a light, fluffy and tropical frozen pie that whips up in a jiffy.  It is not tart like a typical Key Lime Pie and there are no eggs in it.  It has just 3 ingredients whipped up and scooped into a graham crust. Simple and awesome right? The catch is you have to wait… and wait….for several hours for it to freeze so you can totally devour the whole thing! So make it early in the day or the night before and you will be golden!

Ice Cream is a necessity in July no mater where you live. National Ice Cream Day is coming up and next week the temperatures are supposed to hover around 100°. You will need ice cream so lets make some! All you need is half & half or cream, sugar, eggs, vanilla and a handy dandy counter top ice cream maker. If you don’t have one of these modern marvels, you should go right out and get one. I use a Cuisinart and I love it. It is compact, easy to use and easy to clean. You can purchase a great counter top ice cream maker for $60 – $100. It may seem like a lot of money to spend but, if you eat a lot of ice cream, and we do, you can save mucho dinero if you make your own.  The best part is you know exactly what you are eating because you made it yourself.
