Crispy Chicken Cobb Salad

Spring is coming and Daylight Savings Time (which I truly belive should be a national holiday!) is just a few weeks away, seventeen days to be exact! That means the glorious sun will shine later in the evening, allowing us to spend more time outside! More time gardening, mowing, sunning, and swimming! Yay! All of this means you don’t have time to cook a big meal for your family. This is where salads save the day. Light, healthy and easy to put together. This Classic Crispy Chicken Cobb Salad is just the ticket!

Roast Chicken & Baked Potatoes Slow Cooker Hack

I have had a pretty hectic schedule lately so I decided to make my Slow Cooker Rotisserie Chicken for dinner tonight, along with baked potatoes and a salad. Easy. After I prepared and seasoned my chicken I got out the foil to make the logs or balls that go in the bottom of the slow cooker to support the chicken and bam! I had an epiphany! Why couldn’t I use foil covered potatoes in place of the foil logs? I have made baked potatoes in the slow cooker before so maybe it would work! So I tried it! And it worked! The chicken turned out fabulous and the potatoes are perfect! I can’t believe it has never occurred to me to do this before! You know the old saying “you learn something new every day” well it is certainly true at my house today!

I used 4 medium to large baker potatoes, and lucky for me they all fit!  I’m sure foil covered corn on the cob would work as well, and, if you are only cooking for two you could do both! Of course there were chicken juices on the outside foil covering of the potatoes, but the insides were just fine. If you are worried about the juices I guess you could use a slow cooker liner to put the chicken in and set it on top of the potatoes. The juices would stay in the bag but would run into the crevices around the potatoes, keeping the chicken from swimming in the juices while it cooks.

Anyway you look at it, this Roast Chicken and Baked Potatoes Slow Cooker Hack is genius! Try it and let me know what you think!

Directions 

  • Wrap 4 medium to large baker potatoes in foil and arrange in the bottom of your slow cooker
  • Prepare your chicken according to the directions for my Slow Cooker Rotisserie Chicken
  • Position the prepared chicken on top of the foil wrapped potatoes or place the slow cooker liner on top of the potatoes then position the chicken inside the liner on top of the potatoes
  • Cover and cook on low for 7-8 hours
