Remember when you were young and your mom, or in my case grandma, would make old fashion chicken salad and you weren’t too crazy about it! Well those days are over! Chicken salad has taken on a life of its own and everyone has their own version!
Grilled cheese. Everyone loves a good grilled cheese. We all grew up on them. You know what I’m talking about. Your mom would get out two pieces of Wonder bread and a couple of slices of american processed cheese, slap butter on both sides, then she would fry it in a skillet until it was golden and melty and oozing when she put it on your plate. Oh the memories!
My boys grew up on grilled cheese just as I did, however, I rarely made plain old school grilled cheese. Not because I didn’t want to, but mostly because I had to use what ever bread and cheese I had on hand. Necessity is the mother of invention as they say and needless to say my boys always loved whatever weird grilled cheese I came up with. They were growing boys after all, and like most boys they would eat anything that wasn’t nailed down. And so the grilled cheese adventures began and it almost became a challenge to come up with unusual grilled cheese sandwiches to keep myself and my boys from being bored with their sandwich. As they grew older, we began to experiment with adding other items to our sandwich like ham, bacon or fried bologna (one of my personal favorites).
The point is the basic plain old grilled cheese you grew up with is a thing of the past. There are so many options and not enough time to try them all!
This Grilled Cheese Sandwich was by far one of the most popular sandwiches on the LD’s menu. Monterey Jack and cheddar cheese, crispy fried bacon and creamy avocado grilled to perfection on crusty sourdough bread. The sourdough bread is a must on this sandwich. Don’t skip it and use something else. You will regret it!
