Mexican Street Corn Salad
Mexican Street Corn is a really beautiful thing. Fresh corn on the cob is roasted and charred on the grill then slathered with a mixture of mayo, sour cream, Chipotle chili powder, garlic, Cotija cheese and chopped fresh cilantro and served with lime wedges to squeeze on top! Yummy! My mouth is watering right now because Mexican anything and everything makes me do a happy dance!
