Romaine Salad with Crispy Bacon & Gorgonzola Dressing
This salad is based on one of my all time fave recipes from Giada de Laurentis. I have been making this dressing for many years, and even though I change it up by using bacon instead of pancetta, it comes out perfect every time. Have you ever eaten Gorgonzola? If not you are soooo missing out! “Isn’t it the same as blue cheese?” you say. Nope! It’s not! All Gorgonzola cheeses are blue cheese but not all blue cheeses are Gorgonzola! I have never been a big fan of blue cheese, it is typically a little too strong for my taste, but I love, love, love Gorgonzola!
Anyone who knows me, even just a little, knows I love lime! I mean really, really love anything lime! Margaritas, Key Lime Pie, Margaritas, Limeade, Margaritas, Rum and Coke with lime, Margaritas oh….. and this Lime Vinaigrette Dressing. In fact every time we made this dressing at the restaurant, once the zesting began, I would feel the urgent need for a margarita. This is not so weird for me, because, as you can already tell, I love margaritas! I keep a pitcher of them in my fridge all summer long.
Fresh homemade salad dressings are a nice change from bottled salad dressings. I don’t mean mixing the dry packet of stuff into a blob of sour cream or whisking it into vinegar and oil either. I mean zesting, squeezing and seasoning your way to a tasty, fun, and healthy alternative from those. This dressing is light, refreshing and incredibly easy to make with just a few ingredients. Whir it up in your blender and store in your fridge for up to a week. It is fabulous on any salad, especially if it has fruit in it. So throw out all of those store bought vinaigrette’s and give this one a try! Once you begin making your own salad dressing you won’t go back to the bottle or the mix!
